It is derived from the esterification of olive oil’s fatty acids with vegetable polyglycerol, representing a palm-free alternative to common PEG emulsifiers.

This groundbreaking emulsifier forms a lattice of liquid crystals within the emulsion, providing a smooth and glossy appearance. It allows the formulation of stable emulsions with as low as 30-35% of natural oils as their sole source of lipids, regardless of polarity. The result is completely natural emulsions with a soft and light feel, a distinctive feature in water-in-oil systems.
